Virgin Piña Colada

This is a very easy non alcoholic drink that the whole family can enjoy on those hot summer days!

This is the drink that takes me back to the sandy beaches of Cancun anytime I drink it. We all love vacation life and a big part of them is having those delicious fruity drinks while watching the waves in the ocean or soaking in the sun by the pool. Ok…I think I’m ready to pack my bags and head back there asap! 🙂
Ok fine…back to reality. Since I’m not planning a vacation anytime soon, I can at least enjoy the delicious tropical flavours and just pretend I’m sitting on a beach sipping on my drink!
This drink is so easy to make and just only requires 4 ingredients! You can start ahead of time by cutting a pineapple and freeze it but if you’re at the grocery store, simply grab a bag of frozen pineapple so that it’s ready for whenever you need it. Grab your blender and let’s get started!

HOW DO I MAKE IT?
You’ll start by adding the frozen pineapple to a blender. Next you’ll add the coconut milk, simple syrup and ice. You’ll blend it on high until it’s smooth. If you find it’s too think, you can simply add 1/2 cup of water to loosen it a little.

TIPS TO MAKE IT:
1. Use frozen pineapple, this will help give the smoothy like texture
2. Make simple syrup by mixing 1/2 cup sugar with 1/2 cup water
3. If you find the drink too thick when blending, add 1/2 cup water to loosen it up

Ingredients

4 cups frozen pineapple 

1 can coconut milk (400ml)

1/2 cup simple syrup (1/2 cup sugar + 1/2 cup water) 

2 cups ice

Instructions

If using fresh pineapple, cut pineapple into cubes then place in a resealable bag and freeze overnight. 

In a small bowl make the simple syrup by dissolving sugar and warm water. 

To a blender, add frozen pineapple, coconut milk, water, ice and simple syrup.

Blend until smooth.   If you find it’s a little too thick, add 1/2 cup of water. 

Garnish with pineapple pieces
