Kusa is a middle eastern dish that is full of flavour but it takes some time to make. It’s made of grey squash that is cored and stuffed with a beef & rice mixture.
Have you ever craved a specific meal but didn’t have the time to make it? This is exactly what happened when this Unstuffed Kusa recipe was born! I had some squash and decided to just throw everything into a pot (well not actually throw it but you know what I mean 😉 and cook everything together instead of stuffing each individual squash. It turned out amazing and tastes JUST like the stuffed kusa!

Ingredients
1.5 cups cleaned basmati rice
3 cups diced zucchini (seeds removed)
1 large diced onion
2 large diced tomatoes
1-2 minced garlic cloves
1/4kg ground beef
1/4 tsp cinnamon
2 tbsp olive oil
3.5 cups water
1 tsp dried mint
1/2 tsp 7 spices (all spice)
2 tbsp fresh lemon juice
Salt & pepper to taste
Instructions
In a pot heat olive oil, add onions; sauté for 3 minutes Add ground beef, garlic & cinnamon; cook until browned Add zucchini, tomatoes, onions & rice; stir to mix In a measuring cup or bowl, mix water, mint, 7 spices & lemon juice; pour into pot Add desired amount of salt & pepper Bring to a boil, turn down the heat to low and cover with a lid. Cook for about 20 minutes or until all the water has been absorbed. Fluff with a fork and serve with plain yogurt.
