Tomato soup is one of the easiest soups out there. It’s just a few simple ingredients and dinner is done! I like to roast the tomatoes with the onion and garlic then transfer everything a pot. The secret ingredient in this soup is the basil pesto! We all know how well basil goes with tomato, right? Well, this is a match made in heaven! Oh and the grilled cheese croutons that you see, these are a must. Okay, you easily just dunk your grilled cheese sandwich into the soup but the croutons look really cute!
This soup makes enough for 2-3 people. If you’re serving more people, feel free to double or triple the ingredients! Hope you love this soup as much as we do!

Ingredients
2 cups cherry tomatoes
3 tomatoes, halved
2 shallots, quartered
6 garlic cloves
1/4 cup basil pesto
1/4 cup heavy cream
3 tbsp olive oil
1 tsp salt
1/2 tsp pepper
Instructions
Preheat oven to 425°
In a baking dish, add cherry tomatoes, tomatoes, garlic, salt & pepper and olive oil. Mix then bake for 20 minutes.
Allow to cool slightly then transfer to a pot, bring to a simmer.
Add cream and pesto and blend with an immersion blender until smooth.
For the grilled cheese croutons, spread butter over two slices of bread on the outer layer. Add cheddar cheese slices and close the sandwich - butter side out. Bake until golden brown. Cut into 1” squares and serve with the soup.
