Tabbouli is one of my favourite salads. The key ingredients are parsley, tomato and bulgur and lemon which makes this an easy salad to prepare any day of the week. It pairs nicely with beef or chicken kabobs or even Kafta. I love serving the tabbouli on some fresh romaine lettuce leaves. So crunchy and delicious!

Ingredients
1/2 cup fine bulgur
4 tomatoes
2 bunches parsley
3 green onion
1 lemon
1/2 cup olive oil
1 tbsp dried mint (or fresh)
1 tbsp pomegranate molasses
1 tbsp red wine vinegar
Salt to taste
Instructions
Rinse bulgur with warm water until the water runs clear then drain. Squeeze the juice of 1 lemon onto the bulgur and allow to soak. Dice tomatoes and place in a strainer to allow the liquid to drain out. Chop parsley and green onion and set aside in a bowl. Add bulgur and tomato to the parsley. Season with salt and mint. Pour molasses, vinegar and oil over the salad and mix to combine.
