Simple pasta salad that is loaded with veggies that comes together in about 15 minutes! I recently had some family over for a backyard BBQ and pasta salad is usually one of my favourite sides to prepare. This time around, I used prepared dressing which makes this really easy to put together!
When I’m hosting a party, I sometimes like to cut corners but still keep the food tasting good. For the veggies, I mixed tomato, cucumber, sliced olives, shredded carrots and peppers to the fusilli pasta. Poured the dressing overtop and it was ready to be enjoyed!
HOW DO I MAKE IT?
You’ll start by boiling the pasta according to the package details then rinse with cold water. This will stop the cooking process. While the pasta is boiling, start dicing the tomato, cucumber and peppers.
In a bowl, you’ll add the cool pasta, vegetables, shredded carrot and sliced olives. Next, you’ll pour the dressing over the salad and stir to combine.









TIPS TO MAKE THE SALAD:
1. Boil the pasta according to the package instructions then rinse with cold water. This will ensure the pasta doesn’t over cook.
2. Use fusilli pasta or any other small rounded pasta such as rotini, macaroni or gemeli pasta.
3. Keep the pasta in the refrigerator until ready to enjoy.
4. Use canned sliced olives. They’re easy and quick to use.

Ingredients
500g of fusilli pasta
2 cups cherry tomatoes, halved
1 bell pepper, diced
3 mini cucumbers, diced
1 cup shredded carrots
1 cup sliced black olives
1 jar Sun Dried Tomato dressing
Instructions
Boil pasta according to package instructions then drain. Rinse with cold water.
In a bowl, add the pasta, tomatoes, pepper, cucumbers, carrots and olives.
Pour the dressing over the salad ingredients and mix through.
Enjoy cold.
