Spinach Dip

One of my favourite appetizers when I eat out at a restaurant is spinach dip. There’s something so good about creamy melted cheese that melts my heart!!

I love it so much that I came up with this recipe at home that tastes just as good as the restaurants and the fam loved it! It’s great for game nights or a girls night in since it comes together fairly quickly. Serve it with some toasted naan bread and you’ll thank me later!

Ingredients

1 bunch spinach

2 chopped green onion

1/4 cup mayonnaise

1/2 cup cream cheese (softened)

3/4 cup sour cream

1/2 cup shredded parmesan cheese

1 crushed garlic

1 tsp garlic powder

1 tsp dried parsley

1/4 tsp black pepper

1 tbsp olive oil

1 cup shredded cheddar or mozzarella cheese for topping

Instructions

Preheat oven to 375 

Wash spinach and remove stems

In a skillet, heat olive oil and crushed garlic over medium high heat 

Add spinach and cook for 4-5 minutes until wilted then move to a strainer.

Allow to cool slightly then squeeze to remove excess water, transfer to a bowl.

Add all the remaining ingredients to the bowl except for the cheddar (or mozzarella cheese).

Mix until combined then pour into a 6’ baking dish.

Top with shredded cheese

Bake for 10-12 minutes then switch the heat to broil and cook for a further 2 minutes.

Serve with toasted naan bread.

Notes

For the crispy naan bread, I brushed it with olive oil and baked for about 7-8 minutes until they were golden and crispy.
