Simple Syrup (Atyr)

This simple syrup is so easy to make and is perfect for all kinds of Middle Eastern desserts. With just a few ingredients and 10 minutes, this syrup can also be used in drinks as well! What sets this apart from regular simple syrup is the addition of orange blossom. It’s distinct flavour really stands out in the syrup. Many people also add rose water to the syrup. Simply add a teaspoon to this recipe if you’d like to include it in your syrup.

HOW DO I MAKE IT?
You’ll start by pouring the water and sugar into a pot and place it on the stove on medium heat. Mix until the sugar dissolves and bring it to a boil. Then you’ll lower the heat to a simmer and the lemon juice and orange blossom. Set the timer for 10 minutes and let it simmer away. Once the timer goes off, you’ll remove the pot from the heat and allow the syrup to come to room temperature.

WHAT CAN I USE IT FOR?
This is my go to recipe for all of my Arab style desserts such as Baklava Crinkle, Atayef or Knafeh. You can also use it to sweeten up your favourite cocktail drinks!

Ingredients

2 cups sugar

1 cup water

1 tsp lemon juice

1 tsp orange blossom

Instructions

In a pot add sugar and water. Stir then place on the stove on high heat.

Bring to a boil then lower heat to medium. 

Add lemon & orange blossom.  

Simmer for 10 minutes.  

Remove from heat & allow to cool completely.
