Crispy on the outside, soft and fluffy on the inside. These roasted potatoes are the perfect side dish for any meal! Yellow potatoes work really well here since they keep that soft fluffy texture when baked.
They come together really easy and bake away in the oven. It’s great so that I can focus my energy on the main meal such as a roasted chicken or roast beef. I’m all about streamlining things.. especially in the kitchen!

Ingredients
2lbs potatoes
¼ cup olive oil
1 tsp oregano
1 tsp rosemary
1 tsp garlic powder
1 tsp paprika
1 tsp salt
Instructions
Preheat oven to 425°
Slice potatoes into wedges then place in a bowl.
Add oil and seasonings then mix to coat.
Spread potatoes on a non-stick baking sheet.
Bake for 20 minutes then flip and continue to bake for 10-15 more minutes or until potatoes are fork tender.
Serve hot.
