Comfort food!! Who doesn’t love it? You feel good eating it and the flavours are just so darn good! I typically serve roast beef with some sort of veggies and potatoes. Drizzle gravy over my whole plate and go to town! Yum!
You can get creative with a roast but this is a one pan kind of meal – my fav! I put the roast with potatoes, carrots, celery and onion all at once and bake it in the oven. It doesn’t get much easier than that! I like to start the oven on a high temperature at first to get the outside of the roast brown then I lower the temp to cook it nice and slow. The end result is a delicious tender roast with flavourful veggies. So good!

Ingredients
1-2 sirloin roast (total 6kg)
4 large carrots cut into large pieces
3 large onions cut into quarters
1/2 cup softened butter
2 tbsp steak seasoning
1/2 cup water
Instructions
In a roasting pan add vegetables
Place roast on-top of vegetables (fat side up)
In a bowl mix butter with steak seasoning and spread over roast, leaving a thick layer on top of the roast
Sprinkle veggies with a little more steak seasoning; add water to the bottom of the pan
Bake uncovered in a 450° for 15-20 min to sear
Lower heat to 325°, cover and bake for 1 hour, check temperature using a meat thermometer for desired doneness
Remove from the oven when it reaches 10°- 15°less than what you’re looking for since the temperature will rise once it’s out of the oven.
Allow the beef to sit covered for 20 minutes before slicing
