Sunday morning family breakfasts are a must in my house. We all sit at the table together and chat about the upcoming week. I usually put out a big spread for the gang and they love it. Specifically pancakes with fresh fruit. They’re fluffy and great for stacking. I usually make extra and freeze them for a quick breakfast throughout the week. We top them with fresh berries or bananas (or both!) with a drizzle of maple syrup, they’re so good!

Ingredients
2.5 cups flour
1/4 cup sugar
3 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
2 cups milk
1/4 cup melted butter
1 tsp vanilla extract
1 egg
Instructions
In a bowl, mix dry ingredients
In a separate bowl add milk, butter, vanilla & egg
Add to the dry ingredients stir to combine
The batter will be thick and lumpy, don’t over mix, it’s okay if there’s a few lumps
Heat pan to medium heat
Butter the pan and add 1/4 cup of batter
When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden.
Repeat with remaining batter.
