These open faced spinach pies are a spin off of the traditional spinach pies. They may not be the authentic version but they taste very similar and take less than 30 minutes to make!
I have to admit, there’s nothing better than the smell of fresh bread in the house and coming from a Lebanese background, these pies are often made using zaatar, cheese, meat or spinach. Because I’m a fan of creating dishes that taste like authentic recipes, I also like to save time in the kitchen! This is where these delicious pies come in! I used naan bread and they turned out amazing! Seriously, the kids even wanted them for lunch. What I love about these pies is that you get that perfect spinach flavour and they come together really quick!

HOW DO I MAKE IT?
You’ll start by sautéing a diced onion in olive oil then add the spinach. You’ll season with salt and sumac and cook until the spinach wilts completely. You’ll then squeeze lemon and mix then set aside to cool. Next, you’ll spread the spinach mixture over the naan bread and drizzle olive oil over the edges. You’ll bake in a preheated oven for 15-18 minutes and enjoy.

TIPS TO MAKE IT:
1. Use baby spinach instead of regular spinach. This will prevent having to chop the spinach before cooking.
2. Drizzle olive oil over the edges to get that perfect golden colour and delicious crunch
3. Do not over cook the pies, the naan is already cooked so we’re simply toasting them up.
Ingredients
11oz baby spinach
1 large onion, diced
1/2 lemon
1 tsp salt
1 tsp sumac
2 tbsp olive oil + more for drizzle
Instructions
Preheat oven to 375
Heat skillet to medium high heat. Add olive oil then add onion. Saute for 3 minutes.
Add spinach then season with salt and sumac. Stir occasionally for 5 minutes until completely wilted then add lemon juice. Set aside to cool.
Place naan bread on a parchment lined baking sheet and spread spinach mixture over the naan in a thin layer.
Drizzle edges of the naan with olive oil and bake for 15-18 minutes or until the edges are golden brown.
Cut into quarters and serve warm or cold.
