Next level fritter is how I would describe this. It’s a fried dough/egg mixture that is filled with zucchini, parsley and onion.
I remember my mom making this for dinner when I was younger. She always used to serve it with fattoush salad which you can find by searching ‘fattoush’ in the search field up above. It’s the ultimate comfort food!
The zucchini really stands out here. I core zucchini and shred it for this recipe. The chopped parsley & mild onion flavour also go into the mix and it turns out amazing. Once everything is mixed together, you should end up with a thick pancake batter-like consistency.
This dish is best shallow fried. I’ve tried a baked version and it simply doesn’t turn out the same. Definitely save this recipe for a cheat day! It’s so worth it!

Ingredients
4 1/2 cups flour
1 tbsp salt
1 tbsp dried mint
1 tsp pepper
1 egg
4 cups milk
1 small bunch parsley chopped
3 green onion chopped
2 cups zucchini
Instructions
In a bowl, whisk dry ingredients until combined.
Whisk in milk & egg until smooth.
Stir in zucchini, parsley and onion.
In a pot heat vegetable oil for frying on med-high heat. (About an inch high)
Ladle batter into hot oil. (About 1/2 cup)
Cook for 4-5 min or until golden brown. Then flip and cook for another 4-5 min until dark golden brown and cooked through
