Crispy outer layer with a fluffy cheesy center, these mashed potato patties are delicious! Dip them into ketchup or sour cream and you have yourself a perfect appetizer that will have adults and children fighting over the last one.
Anytime I have some mashed potatoes in the fridge, I always like to make these little patties. They’re pretty easy to make and they don’t take long to put together so it’s a great appetizer to snack on just before dinner.
WHAT ARE MASHED POTATO PATTIES?
It’s a mixture of mashed potatoes, cheese, flour, egg and chives that are shaped into round patties then pan fried in hot oil.

HOW DO I MAKE THEM?
You’ll start by adding the mashed potatoes to a bowl. Then you’ll add the shredded cheese, flour, egg, chives and salt & pepper to a bowl. You’ll mix everything until it’s combined then set aside.
Next, you’ll heat up vegetable oil in a skillet. Spray your hands with cooking spray to prevent the potato mixture from sticking to your hands. Then you’ll scoop about 2 tablespoons of the mixture into your hand and shape into a round patty. You’ll carefully place the patty into the hot oil and cook for 3-4 minutes per side. It should be golden and crispy on the outer layers.
Next, you’ll drain the patties on a paper towel lined plate and allow to cool slightly before enjoying.

Ingredients
2 cups mashed potatoes
½ cup flour
½ cup cheddar cheese
¼ cup chopped chives
1 egg
Dash of salt & pepper
Vegetable oil for frying
Cooking spray
Instructions
In a bowl, mix mashed potatoes, flour, cheese, chives, egg, salt & pepper, set aside.
Heat vegetable oil in a skillet over med-high heat.
Spray hands with cooking spray then scoop 2 tbsp of the potato mixture into hands. Shape into circles and flatten slightly then carefully place in the hot oil.
Cook in batches, 3-4 minutes per side or until golden brown and crispy.
Transfer to a paper towel lined plate.
Serve with ketchup.
