I got a huge bag of swiss chard from my father in law’s garden last week and I knew I had to make this soup for the family.
Thankfully my kids have grown up eating this soup because my mother in law makes it often. She helped me out with the recipe and I had the kids try it out to tell me if it tastes like hers and it did 🙌 You know that’s a good thing!

Ingredients
400g chopped swiss chard (about 8 cups)
1 cup brown lentils
1 large onion, diced
2 medium potatoes, diced
¾ cup chopped cilantro
3 chopped garlic cloves
1 tbsp salt
1 tsp ground cumin
½ tsp 7 spices (all spice)
Juice of one lemon
10 cups water
¼ cup olive oil, divided
Instructions
In a pot, heat 2 tbsp of olive oil then add onions. Cook for two minutes then add lentils, potato, water & swiss chard.
Bring to a boil then simmer for 20 minutes stirring occasionally.
While the soup simmers, in a separate skillet heat remaining 2 tbsp of olive oil. Add garlic and cilantro and cook for 3-4 minutes then transfer to the soup pot.
Stir in salt, cumin & 7 spices and lemon.
Cook for another 5 minutes and enjoy.
