You know what’s better than a classic hummus? A classic hummus with a delicious salad on top! Think about it, hummus is delicious with pita bread on its own, but it’s also great for adding olives to it or a dip for cucumbers. Veggies are great with hummus so this salad is not only delicious, it’s also pretty to look at! Serve this at your next party and your family and friends will love it!

Ingredients
1 can chickpeas
1 minced garlic
¼ cup lemon juice
½ cup tahini
2 tbsp plain yogurt
¼ cup water
3 ice cubes
1 tsp salt
For the salad topping:
1 mini cucumber, diced
1 small tomato, diced
1 shallot, diced
¼ cup pitted kalamata olives
¼ cup chopped parsley
2 tbsp crumbled feta cheese
Olive oil for drizzle
Instructions
Boil chickpeas for 5 minutes to soften, drain, allow to cool
Remove skins, this is optional but makes for a smoother consistency
In a food processor, blend chickpeas & garlic until it resembles crumbled chickpeas
Add tahini, lemon, yogurt, ice & salt; blend until combined
Add water, blend until smooth
For a smoother consistency, add 1-2 tbsp more water until desired consistency.
In a bowl, mix the salad topping ingredients.
Spread hummus on a platter and spread salad topping on the hummus.
Drizzle with olive oil and sprinkle paprika for garnish
