This Greek salad is a must try! It’s packed with colorful fresh veggies and the tangy vinaigrette compliments it perfectly! I like to serve it next to grilled chicken or beef but it can totally be served on its own. Crisp lettuce, crunchy cucumbers and peppers are delicious with the salty olives & feta cheese.
It’s a great salad to take to potlucks or parties and simply toss with the dressing right before serving. The dressing in this recipe can be used a few times. Simply store in the refrigerator and take it out 10 minutes before you’re ready to mix so that the oil comes to room temperature.

Ingredients
For the salad:
1 head romaine lettuce, chopped
1 yellow pepper, diced
½ English cucumber, diced
1 tomato, chopped
½ red onion, sliced
½ cup feta cheese, crumbled
Handful kalamata olives
For the dressing:
½ cup olive oil
⅓ cup red vinegar
Juice of 1 lemon
1 tbsp honey
2 tsp dried oregano
1 garlic, minced
Pinch of salt
Pinch of pepper
Instructions
Add salad ingredients to a large bowl.
Mix dressing ingredients and pour desired amount over salad.
Toss salad and serve cold.
* Store remaining dressing in the refrigerator. Allow to come to room temperature before using again. *
