Beautiful colours, crispy bread and tangy flavours is what makes fattoush salad so uniquely delicious. For the most part, this salad is served during the Holy month of Ramadan but my family loved it so much that I remember my mother making it all year round. This salad is so versatile, you can customize it to your liking. Add or remove ingredients, as long as you stick to the tangy dressing and crunchy pita chips, you’ll have yourself an amazing salad!

Ingredients
For the salad:
1 large head of romaine lettuce, chopped
3 mini cucumbers, diced
4 mini peppers diced
4 green onions, chopped
1 cup grape tomatoes, quartered
1 cup fresh chopped parsley
4 radishes, sliced
For the bread:
1 large double ply pita cut into 1” squares
1 cup vegetable oil for frying
For the dressing:
1/4 cup olive oil
2 tbsp fresh lemon juice
1 garlic, minced
1/2 tsp sumac
1 tbsp pomegranate molasses
1 tbsp freshly chopped mint
1/2 tsp salt
Instructions
In a skillet, heat oil on medium high heat. Add pita and fry until dark golden brown. Drain on a paper towel lined dish. Set aside to cool.
In a large bowl, add all salad ingredients. In a small jar add all dressing ingredients and shake well until well combined. Pour over salad and toss.
Add fried pita bread and toss again just before serving.
