It’s soup season and one of my favourite soups is cream of broccoli. It’s super creamy and thick and has velvety swirls of shredded cheddar cheese swimming through it. Grab yourself a bowl and some crackers to dip in cause this is the soup you’ll want to make today!

Ingredients
3 cups broccoli
1 cup chopped celery
1 cup chopped onion
2 tbsp butter 1/4 tsp pepper
1 tsp salt 1/2 tsp pepper
4 cups chicken broth
2 cups cream
1 cup shredded cheddar cheese
2 tbsp cornstarch mixed with 2 tbsp water
Instructions
Melt butter in pot on med heat, add celery & onion; Sauté until soften Add chicken stock, broccoli salt, pepper Simmer until broccoli is soft about 5 min Add cream, bring to a boil Remove from heat, blend with an immersion blender Add shredded cheese and mix Stir in corn starch slurry Top with cheddar cheese when plating
