Cinnamon Apple Cake

It’s apple season and this cake is a great way to use up your apples!  The warm flavours of the cinnamon along with the sweetness of the apples and fluffiness of the cake or have you coming back for one piece after another!

I love apple season because there’s so many different recipes you can make using apples.  Apples are great for sweet recipes like this one or mixed in a salad for a sweet or tart addition to a savoury mix.

This is a great recipe for when you’re in a pinch or for when you have a sweet tooth.  It comes together really quickly because I’m using a box cake mix here.  Yes we can make cakes from scratch, and they’re just as good, but let’s be honest cake mixes are great for a quick recipe, and everyone loves the taste of them!  In this recipe, I added cinnamon to the cake mix, and it just warms up the flavours of this cake! 

HOW DO I MAKE IT?

You’ll start by peeling and dicing the apples then add them to a small bowl. You’ll add some cinnamon and sugar and mix it together until all the apples have been coated then set it aside. 

In a small bowl, you’ll add the melted butter, brown sugar, and cinnamon, and stir until the sugar has been dissolved then set that aside.

In a medium size bowl, you’ll whisk the cake mix, milk, oil eggs and cinnamon until smooth.  At this point, you’ll fold in the apples then pour this into a grease baking dish. 

Next, you’ll drizzle the cinnamon mixture over the top, then use a knife to swirl it into the cake batter. 

You’ll bake the cake in the oven for about 40 to 45 minutes or until a toothpick inserted comes out with a few crumbs. 

While the cake is baking, you whisk the icing sugar with the milk until smooth.  When the cake comes out of the oven, you pour this glaze over the entire surface of the cake.

TIPS TO MAKE IT:

  1. Use honeycrisp apples for best results.
  2. If the cake starts to become dark while baking simply tent with foil while it’s in the oven
  3. Vanilla, white or golden cake mixes are best for this recipe
  4. Be sure to add the extra egg for best results
  5. This cake is best served warm

Cinnamon Apple Cake

Ingredients

For the cake:

1 box vanilla cake mix

4 eggs

1 cup milk

½ cup oil

1 tbsp cinnamon 

For the apples:

2 honeycrisp apples, diced

1 tsp sugar

1 tbsp cinnamon 

Cinnamon topping:

¼ cup butter, melted

½ cup brown sugar

1 tsp cinnamon 

For the glaze:

¾ cup icing sugar (powdered sugar)

2 tbsp milk

Instructions

Preheat oven to 350°

Peel and dice apples then add to a bowl.  Add sugar and cinnamon, mix to coat, then set aside.

In a separate bowl, mix melted butter, brown sugar, and cinnamon.  Stir until all the sugar is dissolved then set aside.

In a bowl, add cake mix, milk, oil, eggs and cinnamon.  Whisk until smooth then fold in the apples.  Transfer to a greased baking dish and drizzle the cinnamon sugar mixture over top, then use a knife to swirl it into the cake batter.  Bake for 40 to 45 minutes.  The cake is ready when a toothpick inserted comes out with a few crumbs.

While the cake is baking, in a small bowl, mix the icing sugar and milk until smooth.  When the cake is done, drizzle the icing over the surface and allow to cool slightly before enjoying. 

This cake is best served slightly warm with a scoop of vanilla ice cream.
