This shawarma bowl is loaded with everything you would find in a sandwich plus the addition of the beautiful yellow rice!
In my home, we have shawarma a few times a month. It’s one of those meals that is so packed with flavour, healthy and delicious. We enjoy it in a sandwich or on top of a salad. This time around, I added some rice to add texture and flavour to the bowl. The chicken is marinated for a few hours to really get that shawarma flavour and when it comes to the veggies, the sky is the limit! Add anything you like and enjoy this bowl with a huge dollop of garlic sauce or hummus!

Ingredients
For the chicken:
5 boneless chicken breasts
2 tbsp shawarma spice
2 tbsp lemon juice
2 tbsp olive oil
1 tbsp plain yoghurt
1 tsp 7 spices (all spice)
1 tsp garlic powder
1 tsp paprika
1 tsp salt
For the rice:
2 cups basmati rice, rinsed
3 ½ cups chicken broth
1 tsp salt
1 tsp turmeric
For the salad:
Romaine lettuce, chopped
Cucumbers, sliced
Grape tomatoes, halved
Pickled turnips
Pickles, sliced
Radishes, sliced
Green onion, sliced
Fresh parsley, chopped
Instructions
Add the chicken to a bowl with all of the marinade ingredients. Cover and refrigerate for 1 hour or up to overnight.
In a skillet on medium heat, add 2 tbsp olive oil. Place chicken on the skillet and cook for 5 minutes. Flip and cook for another 5 minutes or until the internal temperature reads 165 on a meat thermometer. Alternatively, you can grill the chicken on a grill. Set chicken aside for 10 minutes, then cut into cubes or slices.
While the chicken cooks, prepare the rice. In a pot on high heat, add rice, turmeric, salt & broth. Stir to combine. Bring to a bowl then cover and lower the temperature to low. Cook for 10-12 minutes or until water has absorbed. Fluff with a fork.
In a bowl, add lettuce to half of the bowl and rice to the other half. Add vegetables and chicken. Top with a big spoonful of garlic sauce or hummus.
