Here’s a great way to warm up on crisp fall evenings!
Chicken rice soup has a touch of lemon and all the good stuff to keep you healthy!

Ingredients
6 cups chicken broth
2 chicken breasts, cubed (previously boiled)
¾ short grain rice
2 carrots, diced
1 large onion, diced
¼ cup chopped parsley
2 garlic, minced
1 tsp thyme
½ lemon
2 tbsp butter
1 tsp salt
½ tsp pepper
Instructions
In a pot, melt butter, add carrot & onion, cook until softened
Add garlic, broth, thyme, salt & pepper
Cook for about 15 min or until rice is cooked through
Add chicken, lemon juice & parsley
Enjoy!
Notes
If making the chicken broth from scratch, in a large pot, add 8 cups water, 2 chicken breasts, carrot peels, onion peels, cinnamon stick, bay leaf, 2 Maggi cubes, bring to a boil and simmer for 30-40 min. Strain and use for this soup or anything else that requires chicken broth
