Classic soup that warms your heart on a cool winter day. This soup is like a big hug in a bowl! Anytime someone in the house gets the sniffles, this is my go to soup. It has so many health benefits so it’s the perfect fit for the little ones.
Typically egg noodles are used for this soup but this time I used vermicelli and it was so good! Hope you love it as much as we do!

Ingredients
2 chicken breast
10 cups water
1 chicken bouillon cube
2 celery stalks, diced
1 large onion, diced
2 carrots, diced
1 garlic clove, minced
1.5 cups vermicelli noodles (or noodles of choice)
2 tbsp butter
1/2 tsp thyme
1 tsp salt
1/2 tsp pepper
Instructions
Place chicken breasts and chicken bouillon in a pot. Add water and bring to a boil.
Cook for 10-12 minutes, skimming off any fat that floats to the surface, then set aside. Dice chicken into bite size pieces and reserve 8 cups of broth for the soup.
In a large pot, heat butter. Add celery, carrot & onion. Sauté for 4-5 minutes then add garlic. Cook for 2 minutes then add broth and bring to a boil.
Add noodles and cook according to package instructions (typically around 3-4 minutes for vermicelli) then add chicken, thyme, salt & pepper.
Cook for a further 10 minutes and serve immediately.
