This bulgur pilaf is hearty, healthy and perfect for any day of the week. It can be eaten as a main or side dish. This is a vegetarian version but you can easily add some beef in it to add more protein. It’s packed with fiber and the kids love it!
Being Lebanese, we tend to eat alot of rice with our meals. This is a great way to switch things up and keeping it healthy. Some people like to serve this with some plain yogurt on the side or enjoy it with pita bread. Either way, once you try this, I know you’ll enjoy it! It’s such a simple meal that is packed with flavour.
To make this a vegan meal, simply switch out the chicken broth for vegetable broth.

Ingredients
2 cup coarse bulgur #3, washed & drained
1 large onion, diced
1 cup strained tomato
3 cup chicken broth
2 tbsp olive oil
1 tsp salt
½ tsp all spice
Instructions
In a pot set to medium heat, sauté onion in olive oil for 5-7 min then add the bulgur, stir.
Add broth, strained tomato and spices, stir to incorporate all ingredients.
Bring to a boil then lower heat to a simmer.
Cover and cook for 15 minutes stirring occasionally.
Remove from heat, leave covered and allow to sit for 10 minutes.
Fluff with a fork.
Serve warm.
