I had a bunch of tomatoes from the garden and usually when I have a lot of tomatoes, I make bruschetta. This time I decided to make it into a pasta with some chicken and WOW! You need to try this recipe out!
It’s full of flavour and is great for weeknight meals, potlucks, and parties! Best of all, you can serve this warm or cold!

Ingredients
500g pasta of your choice
2 chicken breasts, cubed
1 tsp Italian seasoning
1 tbsp olive oil
½ tsp salt
2 shallots, diced
3 large tomatoes, diced
For the dressing:
½ cup olive oil
1 tsp garlic powder
1 tsp dried basil
1 tsp dried oregano
2 tbsp balsamic glaze
½ cup parmesan cheese
½ tsp salt
½ cup crumbled feta cheese for topping
Chopped parsley for garnish
Instructions
Boil pasta, drain and rinse with cold water. Set aside in a large bowl.
In a skillet, heat 1 tbsp olive oil. Add chicken and season with Italian seasoning and salt. Cook through, set aside.
Add chicken, tomatoes and shallots to the pasta.
Mix dressing ingredients and pour over the salad. Mix to combine.
Sprinkle crumbled feta cheese over the salad and garnish with parsley.
Enjoy warm or cold.
