A cheesy rice packed with broccoli and chicken that comes together in one pot makes this the perfect weeknight meal!
I’m all for one pot meals. They’re usually quick to make, a few ingredients and you only have one pot to wash (or throw in the dishwasher!). This meal is just that! The chicken is tender, the broccoli has a slight crunch and the rice is coated with a velvety smooth cream sauce. It kind of reminds me of risotto without the fussiness of making it!
HOW DO I MAKE IT?
You’ll start by sautéing the onion in butter and oil then adding the garlic and chicken. Once the chicken is just about cooked, you’ll add the flour and stir to coat the chicken. Next, you’ll pour the milk in batches to break up any flour lumps. The rice, broth, spices go in and cook for about 10 minutes with the lid on the pot. Next, you’ll add the broccoli and cook for about 5 minutes, covered. Lastly, you’ll add the cheese and stir everything together.









TIPS ON HOW TO MAKE IT:
1. Cut chicken into uniform bite size pieces to ensure even cooking.
2. Stir the milk in slowly to break down the flour lumps.
3. Using long grain rice is best for this recipe.
4. Use marble or cheddar cheese for best results.


Ingredients
3 chicken breast, cubed
1 head broccoli, cut into small florets
1.5 cups long grain rice, washed
2 cups milk
2 cups chicken broth
2 cups marble cheese, shredded
1 onion, diced
1 garlic, minced
2 tablespoons flour
2 tablespoons butter
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon pepper
½ teaspoon thyme
Instructions
In a pot on medium heat, add butter and olive oil.
Add onion and cook until translucent.
Add garlic and chicken. Cook until the chicken is just about cooked.
Add the flour and stir to coat the chicken.
Slowly stir in the milk to break down the flour lumps.
Add rice, broth and spices and bring to a boil.
Cover with a lid and cook for 10 minutes.
Add broccoli, cover and cook for a further 5 minutes.
Stir in the cheese and enjoy immediately.
