My kids had challenged their dad one day to make dinner. Since he isn’t the cook in the house, it was a major challenge for him but he took it like a champ! They challenged him to make this broccoli & Boursin cheese stuffed chicken. It was our first time stuffing chicken with Boursin cheese so we weren’t sure how it was going to turn out.
Well, let me tell you, these were delicious!! He did an amazing job with this meal that I wrote everything down that day to save this recipe to make it again in the future.
You’ll need an oven safe dish for this recipe so a good ol’ cast iron skillet will be your bestie for this meal. Hope you love it as much as we do!

Ingredients
4 chicken breast
1 cup chopped broccoli florets
1 garlic & herb Boursin cheese
2 tbsp cream cheese
1 tsp Italian seasonings
1/2 tsp paprika
Salt & pepper
3 tbsp olive oil
I cup heavy cream
Instructions
Slice chicken through the thickest part of the breast ensuring not to cut all the way through, pound with a meat palette to thin out the chicken
Add seasonings and 1 tbsp olive oil to the bowl
Marinate for at least 1 hour
In a bowl, mix broccoli, Boursin cheese & cream cheese, set aside
Place 2 tbsp of cheese mixture in the centre of the chicken breast, fold chicken over the cheese mixture and secure with a toothpick to prevent it from opening while cooking
Heat an oven safe skillet on medium heat with 2 tbsp olive oil
Place stuffed chicken on skillet and sear for 3-4 minutes on each side
Transfer skillet to a 425° preheated oven and cook for 15-18 minutes or until a thermometer reads 165°
Remove chicken from skillet, place back onto stove top, add cream and scrape the bottom of the pan to create a cream sauce
Serve immediately with rice & vegetables, drizzle cream sauce overtop

Be sure to scrape the pan then add the cream to the pan to create a delicious cream sauce.
