Vanilla ice cream that is mixed with melted Biscoff spread and crunchy Biscoff cookies is the perfect summer treat. Best of all, it comes together in about 5 minutes!
It’s the summer time and who doesn’t love ice cream on those steamy hot days? My kids and I have tried many flavours to recreate the famous blizzard from Dairy Queen and this Biscoff one is by far our favourite one yet! The chunks of cookies and velvety Biscoff spread really make this a delicious treat to have all summer long!
HOW DO I MAKE IT?
You’ll start by placing your mixing bowl in the freezer for about 20 minutes. This will ensure the bowl stays cold while you’re making the blizzard.
While the bowl is in the freezer, you’ll melt the Biscoff spread in a microwave safe bowl and set aside. Break the cookies into small pieces and place in a bowl and set aside. Once the bowl is cold, you’ll transfer the bowl back to the mixer and hook a paddle attachment to the machine.
You’ll scoop the ice cream into the mixing bowl and whip it until creamy. It will only take about 45 seconds on high speed.
Next, you’ll add the Biscoff cookie pieces and the melted spread and mix on medium speed until combined.
The Biscoff blizzard is ready and can be enjoyed right away.

TIPS FOR MAKING IT:
1. Place the bowl into the freezer to ensure the bowl stays cold while whipping the ice cream.
2. Use a stand mixer if possible with the paddle attachment for best results. If you don’t have a stand mixer, a hand mixer will work just as well!
3. Use cost efficient plain vanilla ice cream. You’re going to be adding alot of flavour to the ice cream so there’s no need to spend alot on it.

Ingredients
10 scoops vanilla ice cream
1 cup Biscoff cookies, broken into small pieces
½ cup Biscoff spread, melted
Instructions
Place your stand mixer bowl in the freezer for 20 minutes then transfer to the mixer with paddle attachment.
Scoop ice cream into the bowl and mix on high speed until smooth (about 45 seconds)
Reduce speed to slow and pour cookie pieces and melted spread into the mixer while it’s running.
Mix until combined.
Scoop into glasses or cups and garnish with crushed cookie pieces.
