Fluffy, chocolatey and moist, that’s the best way I can describe these muffins! They’re so delicious, especially right out of the oven. This recipe can be made into a banana bread or muffins. I prefer the muffins since they don’t take as long to bake.
I baked these cookies with my daughter over the weekend. She actually made the muffin mixture, it’s that easy. Simply mix everything in one bowl and I like to use an ice cream scooper to scoop the batter into the muffin cups. You can try baking without muffin cups, just be sure to grease the pan well before adding the batter. Once they come out of the oven, your house will smell like a bakery! So good!

Ingredients
3 ripe bananas
1/2 cup sugar or less
1 egg 1 tsp vanilla
1/3 cup melted butter
1 tsp baking powder
1 tsp baking soda
1 1/2 cup flour
1 cup chocolate chips
3/4 cup chopped walnuts (optional)
Instructions
Preheat oven to 350
In a bowl, mash bananas.
Mix in sugar, egg, butter & vanilla.
Stir in dry ingredients then chocolate chips.
Stir until just incorporated- don’t over mix.
Line a muffin tin with baking cups.
Use an ice cream scooper to scoop batter into baking cups.
Bake for 15-20 minutes or until a toothpick inserted comes out clean.
Notes
To make this into a banana bread, simply follow the same steps and bake in a loaf pan for 45-50 minutes or until a toothpick inserted comes out clean.
